1 – Salads

After first watching The LEGO Movie last year, our son Oliver started asking about the mysterious phenomenon known as “Taco Tuesday“. So we started a new tradition of what we call “Taco Bowl Tuesdays”; as you may have seen on my Instagram feed, we make them pretty regularly now. I thought it would be pretty fun to write up our Taco Bowl Tuesday recipe as a change of pace and a glimpse into our everyday lives.

The base of the recipe is simple: equal portions of seasoned ground beef, rice, and lettuce. There is some variation in which rice we use; sometimes we make Mexican Rice, and other times we make Cilantro-Lime Rice. The toppings themselves are usually a combination of what we have on hand and what we’re feeling at the moment.

Poke is a raw fish salad from Hawaii, most famously made with yellowfin tuna (“Ahi”). The word “Pokē” itself is a Hawaiian verb that means to slice or cut. It’s not unlike other raw fish dishes worldwide (fish tartare, carpaccio, and sashimi, for example), but it holds a special place in my heart, having lived in Hawaii for most of my 20s.

Originally made with sea salt and seaweed, foreign ingredients like soy sauce, ginger, onion, and tomato were added later when other cultures brought their cuisines (and ingredients) to the islands. Poke as we know it today – with a base of fish cubes, soy sauce, onion, and salt – became popular in the 1970s when it started to appear in local cookbooks, and has been growing in popularity ever since.

Tilapia has been an important food source in North Africa and the Middle East for thousands of years, but has only recently been gaining ground in the United States. Over the past 50 years, worldwide consumption of this fish has skyrocketed, and for good reason: tilapia is fast-growing, lean, low in mercury, and can thrive on an algae or vegetarian diet.

While wild-caught fish is always preferred, farmed tilapia has an extremely low toxin profile and minimal environmental impact when raised in the right conditions. Tilapia is one of the most sustainable and inexpensive farmed fish; by comparison, it takes over 3 pounds of wild fish to produce only 1 pound of farmed salmon. In a world of decreasing wild fish options, I think it’s prudent to find the next best thing. Seek out tilapia farmed in the United States, as they are better observed than in many other countries, especially fish farms in China and Southeast Asia.

Farmed tilapia does not have the same Omega-3 to Omega-6 ratio as other, wild-caught fish, but it is still an excellent protein source – it just shouldn’t be treated like an Omega-3 rich meal. Instead, we like to think of it as the nutritional equivalent of chicken breast; not a robust source of vitamins and nutrients, but still great to have from time to time.

To tell the truth, it’s not often that I get a hankering for a meal-sized salad. There’s a lot of chewing involved. But if I am going to sit down and enjoy a full salad, I prefer to eat something made with a wide variety of hearty ingredients. In that regard, Cobb Salad takes the cake: it’s basically lettuce and a bunch of solid, pleasurable mix-ins. No dainty ingredients like sprouts, no sir! Okay, sometimes Cobb recipes call for chives, but you get my point.

Both the salad and dressing used in today’s recipe come from California in the early 20th century. Bob Cobb, owner of the Brown Derby Restaurant in Hollywood during the 1930s, whipped up a quick salad for a friend with a toothache using leftovers found in his kitchen. He cut the ingredients up into small pieces so as not to exacerbate his friend’s condition. (Personally, I would have whipped up a pureed soup if my friend had a toothache.) Other stories contend that there was no toothache involved. Either way, the salad was such a hit that Cobb added it to his menu, and it took off from there. Green Goddess Dressing was made by a San Francisco chef in the 1920s, after a popular stage play of the same name. While the salad and dressing don’t traditionally go together (Cobb salad is usually served with red wine vinaigrette), I really like the pairing of the two. Plus, they each call for 1/2 an avocado, so in that sense, they fit together perfectly.
